Any ideas where I could mount one of these so I can adjust while driving?

since it's just an EQ, you could mount it almost anywhere. on the side of the center console, maybe?

Great, yes on the side of the centre console looks good and easy....facing upwards, positioned roughly in front of the driver's seat belt receiver. It is out of obvious view also.

On my MGB i put it between the consoe and driver seat faceing up..

These 70`s -80`s tech gimmicks really aren`t necessary today as even most cheap head units have at least 3 digital adjustments for low/ mid / high frequencies and then usually a choice of crossover frequencies for the subwoofer, say between 50 - 200Hz. Decent amps will also have a range of compensation adjustments and crossover frequencies, particularly if it incorporates active crossovers.

Fair enough it may be more difficult to fiddle with while driving but that is a dangerous activity anyway. Personally would rather have a semi driver on amphetamines coming towards me at 100Km/H than some jerk fiddling with their stereo or texting on their phone. Sure you do neither Tiny, so nothing personal.

So perhaps a head unit with a remote? I have had some that I never used but you could stick it on the steering wheel, dash, wherever, although it is still a distraction while driving.

I managed to find a period correct Blaupunkt and amp with an Eq similar to that one. I slapped some velcro on the top of the EQ and stuck it on the side of the carpet on the driver's side of the tunnel. I find it a rater convenient location.

Well forum-goers, I had to think about it for a little while but in the end the 5 band EQ went here, on the right hand side by utilising a persuader to smash a correctly sized whole in the dash:
