So with a parts car I bought came 3 spare heads. Awsome. Except there are no cam caps on them. D'oh. They measure good and are pretty straight. Can I use a different set of caps I have lying around ?

You cant use it just like that, you need whole set matching to head. If you got a set from another head you have to take it to garage where they machined it. I had 931 cylinder head with one missing cap and it's now replaced with other one but it needed some fitting and axis alignment which is more important if you don't want to break camshaft in half
