To lift both front wheels, I center the jack under the crossmember.
To lift both rears, center it under the differential part of the gearbox. (I have a disk of 3/4" plywood that fits the jack to serve as a pad.)
For both wheels at one side or the other, you should find a rectangular jack point just inboard of the rockers, roughly centered front-rear - place the jack under that (again with a wood pad).
There are other round "jack points" behind the rear wheels and I think behind the fronts - don't use them (especially the rears - it's probably not a good idea even with a perfect rust-free car, but if there's any rust and you jack from back there, be prepared for some crackling sounds and bent metal).
To jack just one front wheel, I'll sometimes go under the a-arm as far outboard as possible. For one rear I'll go under the lower shock mount.
Jackstands - for the front, I have small ones whose tops fit within the crossmember just inboard of the a-arm pivot. For the rear, I use large stands under the torsion bar ends <click>, as close inboard as possible.
