those have a likely hood of bending, no support in the middle

They are supported by the strut brace tower.

They'll raise the front of the car by about 2" and if you adjust the sprig height to compensate you can run out of strut travel in a hurry.

This is why the undermount camber plates only really work with shorter struts.

Should work well for a Rally car though.

Yes that is a problem, I have used standard strut cases with the spring pans cut off and then welded an adjustable platform as low as it will go.
As you say its fine for a rally car where I need some ground clearance.
A shortened strut will be the way to go for tarmac or modify the inner wing to move the upper mount upwards.

To give you an idea since you have access to machine tools, it shouldn't be impossible to build something similar with larger base material.
